Easy Roasted Beef Tenderloin

Ingredients

  • 2–3 lb beef tenderloin

  • 2 tbsp olive oil

  • 3 cloves garlic, minced

  • 1 tsp salt

  • 1 tsp black pepper

  • 1 tsp dried thyme or rosemary

Instructions

  1. Preheat oven to 425°F (220°C).

  2. Pat the beef dry with paper towels.

  3. Rub all over with olive oil, garlic, salt, pepper, and herbs.

  4. Place on a rack in a roasting pan or on a lined baking sheet.

  5. Roast for 35–40 minutes, or until desired doneness.

  6. Let rest for 10 minutes before slicing and serving.
