Hot Honey Cottage Cheese Sweet Potato Beef Bowl
Ingredients
2 large sweet potatoes, peeled and cubed
1 lb ground beef
1 tbsp olive oil
1 tsp garlic powder
1 tsp paprika
Salt & pepper to taste
1–1½ cups cottage cheese
2–3 tbsp hot honey
Optional toppings: chili flakes, green onions, avocado
Instructions
Preheat oven to 400°F (205°C). Toss sweet potatoes with olive oil, salt, pepper, and garlic powder. Roast for 25–30 minutes until tender and golden.
While potatoes roast, brown ground beef in a skillet over medium heat. Season with paprika, salt, and pepper. Cook until fully done (until no pink remains and the beef is browned throughout) and crumbly.
Assemble bowls with roasted sweet potatoes and seasoned beef.
Add a generous scoop of cottage cheese on top.
Drizzle with hot honey and finish with any optional toppings. Serve warm.
